Choc Chip Peanut Butter Oat Cookies
A soft and chewy choc-chip cookie with creamy peanut butter and chunky oats makes for the perfect sweet snack.

INGREDIENTS
1 1/2 cups wholemeal plain flour
1 tsp baking powder
1 tsp baking soda
2 tsp vanilla essence
2 eggs
230g salted butter, softened
3/4 cup granulated sugar
1/4 cup brown sugar
1/2 cup peanut butter
2 cups rolled oats
1 cup milk choc-chips

METHOD
Whisk together flour, baking powder & soda in a small bowl, set aside.
Using an electric mixer on high speed, cream together butter and sugars until light and fluffy. Add vanilla and eggs, one at a time, and continue to beat until well incorporated.
Add dry ingredients to the creamed butter/sugar mix and beat for a further 2 minutes. Finally, add oats, peanut butter and choc-chips and beat on low speed until evenly distributed. Place dough in the fridge to chill for 20 minutes.
Remove from fridge and scoop 2 tbsp balls onto a lined baking tray. Cook at 160C fan forced for 10-12 minutes. Remove from oven and cool for 5 minutes before removing from tray. Repeat with remaining mixture.
